Abstract
The current methods of milk processing proved to be degrading the quality of milk and its products. In lieu of this, this project was carried out for the purpose of investigating the application of ultrasonic and shock tube as an alternative to kill micro-organisms in milk. This included the design of a shock tube that would be capable of generating high enough shock wave pressure to kill the micro-organisms. Literature review of ultrasonic application in the dairy industry was carried out and from it, the effectiveness of using ultrasonic was determined.
